I would like to acknowledge the professionalism shown by Mr. Mlrco Beutler and his staff during the course of our business relationship over the past 18 months. The InterContinental Hotels Group Dubai Festival City is a cluster of 3 properties, and the kitchen operations are actually spread over 14 individual kitchens and 21 F&B anlmatlons. As the Executive Chef for this group, I need to know exactly how all my chillers, refrigerators and freezers are operating at all times, and the wireless Temptrak system allows me to get all relevant information without leaving my desk. From my office, I can access the complete temperature history of the 130 chiller units fitted with the monitors.
When I flrst started dealing with Mr. Beutler over 18 months ago, I explained to hlm that I wanted a wireless system that would form one of the pillars of my HACCP program. The beauty of the TEMPTRAK system is that It cannot be compromised by either myself, our engineering department, or anybody else, so it serves as a great tool to present monthly temperature records to the Dubai Municipality Inspectors.
The hotels had a particularly difficult pre-opening period, and due to contractor negligence and shortcuts, we were issued with outlet refrigeration systems that were not of the standard a five star hotel would expect. By compiling records taken from the continuous Temptrak monitoring of the various outlet refrigeration and freezer units, I was able to prove to our owning company that the installed units were not good enough, and we were issued with completely new equipment.
We are still in the early stages of opening our hotel cluster, but already the potential of such a wireless system can be seen by all the relevant HACCP departments, from kitdien to finance to engineering to hygiene. we are poised to commence installation of the monitors ln the second property, and already all the chefs are asking for training, because they can see that this is the necessary technology for the future of kitchen operations.
